There's a crap ton of torque is the head bolts but also a crap ton of price difference, so what's the opinion here, stock engine just a daily driver...

In theory, theory and practice are the same. In practice, they are different.
Stock engine, I would probably go with the less expensive bolts. Building for performance, forced induction or higher compression, get the best you can afford.

Used Fel-pro gaskets and bolts for many years, no complaints

Haven't used ARP so no history there for me

RoHS compliant
I am pretty sure the Fel-pro's are OEM style torque to yield bolts. Once you torque them down, if you have to remove them you need to throw them away. The ARP's are reusable.
