rebuilding my 7.5 diff, anyone know what the rolling torque should be on the pinion shaft when replacing bearings and crush sleeve, should it be with or without carrier

If you don't have time to do it right will you have time to do it over?
I don't remember the torque value but it's called rotating torque and you check it before installing the carrier, preferably with a beam type torque wrench. Did you check or set the pinion depth? Just throwing new bearings at it may work if you're lucky but it may make noise.

14-19 inch pounds. INCH pounds not foot pounds. Check frequently as you crush the sleeve.

got shims for carrier to tight and roasted my bearings

Usually- not always- a bearing that's a little tight survives and one that's loose will fail. Remember that they have to be under preload.

Those specs are the pinion preload according to my spec sheet from richmond gear when installing new bearings and crush sleeve. Crush sleeve torque is massive but preload is tiny.
