My 99 Ford Ranger starts acting up about 5-10 miles down the road everytime. It’s like a miss and loses power. It also takes about 10 minutes to pump gas, it’s like it’s full but it ain’t. I have changed the coil packs, gas filter, and fuel sensor. Still doing the same thing.

Do an ohm test of your plug wires. Could be they have 'opens' that make sending the current to the plugs more difficult, and the juice takes the shortcut, making the plug NOT fire.
It is possible that the acting up happens once the system goes into closed loop. It might not be a bad idea to scan the OBD-II system for pending codes and to take a look at operating parameters that could be 'off'.
The slow pumping indicates something wrong with the vent system so air cannot escape as it is displaced by the fuel entering the tank, and causing a 'back-up' of fuel in the filler neck. You can check the vent tube for blockag, and perhaps check for problems in the fuel tank vapor controls(solenoids and valves) system.
Have you checked the air filter? How about actual fuel pressure and delivered volume? Either could also cause misfire due to lean condition.
