Metal gasket sealer?

Replacing head.

The actual head gasket, egr gasket, and coolant pipe gasket are all thin metal gaskets. I bought that copper spray-a-gasket stuff, is this all I'll need to properly seal these surfaces?

Dude I would not put spray gasket on the head.

Head gaskets are typically crush into place type gaskets. Any kind of gasket maker stuff will likely ruin the integrity of the head gasket.

That's the only one to my knowledge that I wouldn't use that stuff on, the others should be ok

MLS(multi-layer steel) gaskets are used with aluminum heads because aluminum expands more and faster when heated than cast iron, this caused "rubbing" failures in composite gaskets.
Each time engine heats up and cools down rub, rub, rub.

MLS gaskets allow "sliding" vs "rubbing", so last longer than composite when aluminum is involved.

Racers also reuse MLS gaskets, which brings me to the point.

New MLS can be installed dry but I would put some sealer at each corner, MLS gaskets can get "cold leaks", coolant leaks out at the corners, especially on colder days, aluminum heads shrinks a bit.

The copper spray certainly won't hurt anything, and racers will use 4 or 5 coats when reusing gasket.

Yes, use the copper spray on the other gaskets both sides, it helps hold gasket in place and seals any small defects in surfaces.
