Gwaii has a ridiculous rock crawler. in absolute low low gear(he has 3 transmissions and 2 transfer cases going to 4.10 axles) the crawl ratio is like 6000:1. not practical in your application lol.
pretty sure 6000:1 is an understatement..

I think we calculated it at 6069:1.

EDIT: It's 6146:1. not going anywhere fast in that gear lol

one thing you can do is have a wire that's hot with the ignition ran to an old car alarm horn... with a switch. that way if the ignition is hot with the switch open- the alarm will sound

another thing is to take the wire to your fuel inhertia switch and put a toggle switch inline with that. that will cause a break in the fuel electrical system and the motor won't get gas... so it won't crank, just turn over..

the neutral safety switch is another wire that can be switched and then the truck shouldn't even turn over...

is this the answers you wanted? or am i off base?
these are good ideas. i like the idea with the horn/switch, that can act as a deterrent. I like the idea of breaking the fuel flow, too, with a toggle. And a boot in case someone wants to tow it away with a chain? The only people then who could steal it would have to own a wrecker.
