Curious if this would have allowed me to run taller 33”x10.5r15 tires....or if I would have needed one of the 5.1 (I think) gear ratios.

Never done a gear swap before but I foresee one in my future if I am going to keep my 3.0. Its not powerful but it does a great job. Unfortunately I have a damn clattering exhaust manifold that has me wondering how many miles I have left on my engine. I’ve done an engine rebuild but it was on a motorcycle, and that seems way easier.
With a 3.0 a 4.56 should do the job. 4.0 you probably would have been ok

I'm running a 3.0l with 4.56 gears and 35" tires. Performance (if you want to call it that) isn't much different from the original tires and 3.73gears. I think my 6" lift created more wind resistance/ turbulence, though.
