I never use my AC and was tired of the compressor kicking on and off so I unplugged it

RPMs will bump up if it's in the A/C setting, compressor plugged in or not. The reason is to compensate for the added load of the compressor being engaged and preventing the engine from stalling. Try it in another setting that doesn't require A/C like dash only or floor only and see if you still have the same result. If not, then it's the programing for the A/C that is more than likely what is going on.

My '03 Sunfire probably did the same thing. I never had an issue shifting without the clutch. BUT, I usually shifted well above 2000 RPM. Usually more like around 3000. I found that the trick was to go into neutral, let the RPMs drop 500 RPM, and then hit the next gear. USUALLY, it went in like butter, but if my timing was off a bit, it resulted in anywhere between a hard shift, and grinding into gear.
Pushing in the clutch is a whole lot eaiser then pulling a trans.

Except that you have to drop the transmission to change the clutch. And, if you do it right, it's *not* hard on the transmission.
