I like pioneer. It's resonable in price and is nice.... Ok... I want to power 2 6x8's 40w rms and 2 6x9's 40w rms and a shallow mount 12" sub 350w rms. I have a head unit that is 20w rms to each channel. I really only want to buy only one amp. I listen to rock. I want a full sound. I'm not sure on how many channels to run or how powerful of amp to run.

run the speakers off the head unit and the sub off an amp. just because the speakers can handle 40watts each doesnt mean they have to have 40 watts. they'll still sound alright with 20watts going to them.

All right sweet. I was thinking about just leaving the speakers on the head unit. What size of amp should I use? I am looking at a 800w mono. It is 360 rms at 2ohms and 250 rms at 4 ohms. Sound good or should I go with a smaller amp and bridge it???

its up to you. whatever fits in your price and power range. either set-up will perform about the same

Better yet, get a 50Wx4 deck...
Now, not to hijack, but i have a question, when i got my pickup the guy had put KINGwood 6.5" speakers in the door, and an aiwa deck.... said he got em off ebay, the 6.5s have a 650W mas and a 160w rms. Ive never seen a speaker like that, my pioneer 10" sub only has a 140W rms and a 700W max. The guy said he paid $60 for speakers and deck.

regardless of what the deck says for watts their all gonna push out about 17 watts per channel.. look how small some 50 watt amps are .. their actually bigger than the deck... i would suggest getting a 2/3/4 channel amp.. first 1/2 channels i would use for your speakers an the 3/4 channel i would bridge for the sub.. i did this for my buddy an it preformed excellent... your speakers are going to have a cleaner/crisper sound with an amp on them too

My pioneer deck is a 50w x 4. That is peak power, RMS would be about 20w per channel. When you set up a system you go with rms not the peak power.

I will figure something out with the amp. Its only a regular cab and it will be loud with 4 speakers and a sub whichever way i go.

beat me to it. most decks are rated at about 50 watts max and somewhere around 20 rms. even so, this is more then enough power for a couple of sets of speakers.
in my truck i have my 25wx4 rms panasonic deck driving 4 rockford fosgate 2-way 6x8's and a 200watt alpine amp driving my single 10" MTX sub and it gets quite loud (too loud to turn all the way up, meaning im not even using its full power potential). even with it turned up loud enough to hurt your ears, it still wont distort.
what ever you set up, you want to be able to max the volume with out over driving (distorting) the speakers. you accomplish this by matching your RMS across the board and using high quality* components and cross overs. I don't know what Chrysler used in our T&C but its 8 speakers and sounds really good all through the volume range
*High quality does not mean expensive.
